Here, the Dawson family has turned their love for everything maple into a sweet and thriving business, and family matriarch, Diane Dawson, loves to share her passion for maple with others.
For Diane, maple syrup goes perfectly with just about everything – tea, coffee, smoothies, ice cream, fudge, veggies, desserts, and yes, right off the spoon. She claims it’s full of all the good stuff – thiamin, calcium, iron and potassium (plus, it’s delicious!).
For maple lovers wanting to expand their use of maple, Diane suggests using maple in your favourite recipes by substituting ¾ cup of maple syrup for every cup of sugar (and reduce the liquid in the recipe by three tablespoons). Here, she passes on her very own Maple Sprareribs recipe for you to make at home. Break out the syrup and get creative this summer!
2 lbs spareribs
½ cup maple syrup
2 tbsp garlic cloves, minced
Directions: Cook ribs partially, either on the stove or in the oven, then marinate in mixture of maple syrup and garlic. Pour over spareribs, stirring occasionally. Bake at 325 degrees Fahrenheit for two hours. Uncover during the last 15 minutes. You can also grill for a few minutes on the barbecue if you choose. It’s (maple) finger licking good!
